easy bison recipes I am looking for appetizer recipes for exotic & wild game meats!?
I am primarily looking for appetizer recipes that use exotic & wild game meats such as: Bison, Elk, Venison, Boar, Duck, Pheasant, Bear, etc. They should be fairly easy to prepare, as well as being very manly but still classy & elegant.
Even though I am mostly looking for appetizers if you have another favorite recipe that utilizes any of the above ingredients or any others that I haven’t listed, please feel free to share!

Cheese Stuffed Meatballs
1 lbs. ground meat (moose, deer, bear, elk, beef, pork etc.)
½ cup fine bread crumbs
1 egg
2-3 tbsp. milk
1 tsp. season salt
½ tsp. pepper
¼" cubed cheese (sharp is better)
Mix meat with all ingredients except cheese, shape meat into balls with a small piece of cheese inside. Best if chilled for an hour, but not necessary. Pan fry in oil or deep fry. Serve on toothpick with sauce for dipping
Honey Mustard Sauce
½ cup Mayonnaise (mayonnaise not Miracle Whip)
2 tbsp. liquid honey
1 tsp. mustard
Mix mayonnaise, honey and mustard. Amounts can be varied depending on tastes.
Venison Tenders
INGREDIENTS
Cut venison in strips 1/2" by 1/2" and 4" long.
Marinate 8 to 12 hours in the following:
2 cups milk
1 teaspoon seasoning salt
1 teaspoon dry mustard powder
1 egg
1 teaspoon ( or less) garlic powder
black pepper to taste (I use 1/4 teaspoon)
1 teaspoon onion powder or dehydrated onion
Directions
Remove venison strips from the marinate and let dry.
Dip in egg whites.
Dip in crushed dry Pepperidge Farms stuffing mix.
Fry quickly in a quarter inch of very hot oil.
Duck or Goose Nuggets
INGREDIENTS
Cubed duck breasts or goose
1 bottle BBQ sauce
2 cans of beer
Bacon
Toothpicks
Glass of water
Directions
Mix the BBQ sauce with 1 1/2 cans of beer.
Place the cubed duck breasts (approx 1 to 1 1/2 inch) in this marinade overnight.
Mix every now and then.
Take the nuggets out, wrap with bacon and secure with toothpicks.
Throw the nuggets on the grill on medium heat. Be sure to watch the grill, as the bacon grease causes flareups that can turn your tasty nuggets into coals in no time. This is where the water comes in handy.
Baste them with BBQ sauce.
Grill them until they are medium to medium rare, take off and enjoy. This "finger food" makes a great appetizer at parties.
